Since you're staying near here in Jongno, this is an easy, unhurried start rather than a special trip across town. Arriving at 9:30 gives you a quieter first look at the gate before the day's crowds build, which suits the slow mornings you mentioned.
This is the easy, gentle lunch to slot between Gwanghwamun and Bukchon, and it happens to sit right on the walk between them. Sujebi is a mild, warm broth with hand torn dough, nothing spicy, so it works well for Sara, and the potato pancake gives you a second thing to split without turning lunch into a production.
After lunch the pace drops back down here. Bukchon is a real neighbourhood, not a single sight, and from the sujebi place you are only a short walk from Gyedong-gil, so there is no rush to get there.
You'll come off the slow walk through Bukchon right into this one, which sits in the same hanok alley so there's no trekking involved. It's the natural place to sit down for a bit after a full morning and early afternoon on your feet, before heading to dinner at Imun Seolnongtang. The churros are light rather than heavy, and neither of you needs to worry about spice here, so it's an easy stop for Sara too.
After a full day of walking Gwanghwamun, Samcheong-dong and Bukchon, this is an easy, unfussy dinner rather than a production. Imun has been serving the same clear ox bone broth since 1904, which fits what you said about eating the way locals actually eat rather than chasing a famous name.
Five minutes from Imun Seolnongtang the street drops below road level and the noise goes with it. The stream is lit at night, the path is flat, and nobody is selling anything, which makes it the right way to end a first day that has already had a gate, a market of alleys and two good meals. There is no plan here: walk east as far as feels right, cross on the stepping stones if you like, turn back when you are ready.
Landing at Gwangjang around 10:00, before the lunch rush fills the aisles, gives you the market the way regulars see it rather than the version you'd queue for at the famous gimbap stalls nearby.
After the market this is the one properly quiet stretch of your day, and it earns that quietness honestly: no dancheong, no ornamentation, just the 101 metre hall and its red lacquer columns, built to hold the spirit tablets of the Joseon kings rather than to impress anyone.
After the shrine, this is your slow hour in Ikseon-dong before Seonggyungwan. It is a five-minute walk into the alleys, four old hanok joined together, so you get the low wooden beams and the courtyard feel without a queue at the door. Sara can skip the Baileys-based Boy or Girl Coffee and just have a plain latte, and neither of you needs to rush, since Seonggyungwan closes at 18:00 and dinner is not until then.
After the quiet of Plant Café, this is another slow, uncrowded stretch before you head into a bigger dinner and the makgeolli evening. Seonggyungwan does not draw the same crowds as the main palaces, so you and Sara can walk the old lecture halls at your own pace, no queueing, just the ginkgo trees and six hundred years of a working Confucian academy that still sits inside a university campus.
After Jongmyo and Seonggyungwan, this is the kind of dinner that doesn't ask much of you, just a warm bowl of clam kalguksu and a plate of handmade king dumplings between the two of you. It's an easy, gentle choice for Sara too, since the broth is savory rather than spicy. Given you're already booked for makgeolli afterward at Mr.
You said you wanted a proper makgeolli evening, and this is where I'd put it. It's a short hop from Jongno down to Yongsan, worth the trip after a full day at Jongmyo, and the pace here is unhurried, plates of kimchi-jeon and potato-jeon meant for sharing over a few different makgeolli so you can compare styles rather than commit to one bottle.
Since you two move slowly in the mornings, a 9:30 start here works well; you won't be rushing straight from breakfast, and the palace grounds are big enough to wander without feeling like a checklist stop.
After a slow morning at Changdeokgung, you will not want a long wait or a menu you need to think hard about, and this gives you neither. The Gaeseong-style king dumplings are bigger than the usual street mandu, so it eats like a real sit-down lunch rather than a snack, which fits your two-or-three-things-a-day pace.
After Changdeokgung this morning, this gives you both a proper sit-down before the museum and dinner, rather than another walking stretch. It's a five-minute climb up to the 4th floor in Seochon, and the payoff is the view, Inwangsan right behind the rooftop, which does the architecture interest justice without needing an explanation.
Before Onjium, this is the free version of the view people pay for elsewhere. Take the lift to the eighth floor of the museum on Gwanghwamun Square and you are looking straight up the old axis of the city: the gate, Gyeongbokgung, then Bugaksan behind it. There is no ticket and no queue, and at 17:00 in late October the light is starting to go soft.
A quick note first: this one runs well past your daily budget range, so treat it as the deliberate splurge night rather than the pattern for the rest of the trip.
For your last morning, this fits the slower pace you mentioned wanting, a repurposed water pumping station turned into three quiet spaces, with the Open Well being the one worth sitting in for a few minutes rather than photographing and moving on. It is a short bus ride, or a 25-minute uphill walk, from Gyeongbokgung, and Jaha Son Mandu for lunch is just down the hill from it.
This is the kind of gentle, unhurried lunch that suits your morning at the Yun Dong-ju museum, a hanok dining room rather than a queue, and a bowl of clear broth that won't fight with Sara's spice tolerance. The kimchi dumpling soup has a little kick, so the meat dumpling soup is the safer order if she wants something mild.
After lunch in Buam-dong the bus drops you back into Seochon, and this is where to spend the quiet part of your last afternoon. It is up a narrow staircase behind Sajikdan, a second-floor room where the owner has actually read what is on the shelves rather than arranging them for effect. It opens at noon, so 13:30 is the first calm hour of its day.
Junggu
This is the low-key close to your last afternoon, after the bookshop café and before coffee at Darak and the last dinner. At 1,000 won entry it fits the budget without a thought, and the mix of the old Korean halls with Seokjojeon's Western-style stone facade gives you the same contrast of architecture you have been drawn to elsewhere, without needing to rush anyone through it.
Junggu
Cafe Darak works well right where you've placed it, five minutes from Deoksugung's side gate after you've spent the afternoon there, and since your fourth day falls on a Sunday, you'll catch it open (it only runs weekends).
Junggu
After a full day of walking Deoksugung and ducking into cafés, this is the kind of dinner that lets you just sit down and eat properly. Woo Lae Oak has been serving Pyongyang naengmyeon since 1946, and that's the dish to order here, the broth is mild rather than fiery, which works well for Sara, and you can always add the bulgogi or suyuk if you want something more substantial for two.
